Kohala Coast, HAWAII: Mauna Lani’s Executive Sous Chef Allan Nagun now leads the helm at the CanoeHouse as Chef de Cuisine. Nagun has been a key part of Mauna Lani's culinary team for 15 years and he's a firm believer that when you have superior quality ingredients, you don't need to hide the flavor, just let it be revealed.    

Chef Allan has been personally recognized for his poke, a favorite dish you’ll often find on his menus. While he experiments with modern takes on this popular Hawaiian pupu, it's his traditional poke that lands him acclaim, including being recognized as ‘the one to beat' at the annual Hawaii Island Festival Poke competition.

At the CanoeHouse Chef Nagun has the opportunity to showcase his take on Hawaiian Regional Cuisine by adding an artisanal flair.   While Nagun started developing poke dishes in his childhood based on the best and freshest ingredients available, he’s taken that same concept incorporating local products in their peak season. Nagun’s menu is a melting pot of flavorful cuisine with light delicate salads to bold flavors drawing inspiration from the different ethnic groups that comprise Hawaii’s culture whether it’s incorporating Korean kimchee sauces or Chinese flavors.

Chef Nagun also hosts the "Captain's Table" Blind Tasting Menu. Offered Thursday, Friday and Saturday evenings, chef's culinary flair will inundate you with originality and his take on Hawaii Regional Cuisine. Chef Nagun will source locally sustainable products for your dinner with 85% of your meal being sourced from the Island of Hawaii. Menus will be seasonal, exciting and personalized. It's an interactive, fun educational evening as the chef personally presents each course with wine pairings.
